I've never done a recipe post before! Why not? I have no idea. But tonight I'm going to give you one heck of an easy recipe that is sure to please. I used to use ground turkey because, well, it was all the rage about 15 years ago. Then I realized I had to doctor it up a bit with some cider vinegar or beer or something because I just wasn't digging the taste of turkey. A few years back I gave the ground chicken a try and I was completely sold. Better flavor, better texture (does anyone else find ground turkey to be squeaky as you chew?).
So, here it is, my recipe for Chicken Taco Filling, which I find works for a variety of Mexican-like food meals. Oh, and I say this makes enough for 4 people, but in all honesty, I could practically eat the whole thing by myself. So, I guess what I'm saying, besides that I have a hearty appetite for spicy yummy food is, you may want to double it. Leftovers are even better after the spices have had a chance to really sink in.
Want to extend it even further? Add a can of black beans, rinsed and drained to the mix before adding the water.

You know, I have no idea why I haven't tried ground chicken ever yet. We've been a ground turkey. I'm going to mix it up now.

thank you for the great meal idea. Yesterday I didn't have a clue what to make for dinner, read your blog printed off the recipie, went to the shops bought the food, made the dinner and everybody cleaned their plates and were looking for more!. So it was very popular indeed in our house:)
